To answer the question of the post, I believe there's a lot to gain from the French market - especially in the future! And competition is far less than for instance Denmark, which (despite only 5 mil. people) makes good money for 5-10 .dk affiliates.

Online gambling is totally forbidden but ... only for residents! I heard it will be legalized in 2k9.
So if you are living in USA or elsewhere you can go without a problem, and yes there's a lot of money on the french market as well.
Best exemples for sports betting since you're talking about it are bwin.com and betclic.com with more than 80% of frenchies and be sure they have enough money that they don't know what to do with
