Tags within wordpress

Im still a bit unsure of what tags (or how many to use for each artictle).

For example, if an article is on Poker Legislation would I use Tags such as Poker, Poker Legislation, politics & Internet Gambling.

Would I mark the article with several tags for a week or so then narrow it down when Im trying to organise the acticles within the blog.

Or do I just stick with one tag from the outset & go with that?
